Chicken Salad Croissant Sandwiches

  • 1 rotisserie chicken, meat removed
  • 3 stalks celery, sliced
  • 1/4 cup mayonnaise
  • 1/4 cup plain yogurt
  • 3 tablespoons honey mustard
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried thyme leaves
  • 6-8 croissants, toasted and split 
In medium bowl, combine chicken and celery. In small bowl, combine mayonnaise, yogurt, honey mustard, lemon juice, and thyme and mix well.
Make sandwiches with the split and toasted croissants. Serve immediately.
