Chicken Salad on Waffles

  • 2 rotisserie chickens, meat removed and cubed
  • 3 stalks celery, sliced
  • 1/2 cup mayonnaise
  • 1/3 cup plain yogurt
  • 2 tablespoons Dijon mustard
  • 2 tablespoons lemon juice
  • 1/2 teaspoon dried thyme leaves
  • 8 round frozen waffles, toasted
In medium bowl, combine chicken and celery. Add mayonnaise, yogurt, mustard, lemon juice, and thyme and mix well. Cover and refrigerate for 1 hour.
Toast the waffles. Top with the chicken salad and serve.
